I’ve got two recipes for you this week. The first a quick and easy seasonal snack, making the most of figs which they’re full of flavour at the moment. The second, a rich and warming sausage cassoulet, using chickpeas instead of the more traditional white bean.

Sausages lend them so well to this kind of dish, cooked alongside hearty legumes and a rich and flavourful sauce. The addition of tender cavolo nero adds a bit of earthiness, while the lentils soak up all the delicious flavours. It's a perfect, fuss-free meal for those looking for a warming, satisfying dish that’s both nourishing and full of comforting flavours. If you want to pack in some extra greens to this chickpea recipe, add in a good handful of spinach in the last 5 minutes of cooking.

Whipped Goats Cheese and Honey Roasted Figs on Toast
Serves 2
Ingredients
4 fresh figs
2 tsp honey
1/2 tsp chilli salt
125g goats cheese
100g cream cheese
Juice of 1/2 lemon
3-4 slices of sourdough bread
Olive oil, for drizzling
Method
Preheat your oven to 200°C (180°C fan) or 400°F.
Cut the figs in half and place them in a baking dish. Drizzle with 2 tsp honey and sprinkle with chilli salt.
Roast the figs in the preheated oven for 5-6 minutes, until they are soft and caramelised.
While the figs are roasting, whip together the goats cheese, cream cheese, and lemon juice in a food processor until smooth and creamy. This can also be done in a bowl if you don’t have a food processor.
Toast your slices of sourdough until golden brown.
Spread the whipped goats cheese generously on the toast, then top with the roasted figs.
Drizzle a little olive oil over the top and serve immediately.
