Pancake Day is just around the corner again so this week I’m bringing you two of favourite pancake recipes to cook at home. I hope you love them as much as I do! If you prefer a thick, American style more then you can also check out my Ricotta Hot Cakes recipe.

I’m a real creature of habit sometimes. Almost every year I have classic Crêpes (or thin pancakes) on Pancake Day. Growing up we’d always have lemon and sugar pancakes on birthdays and special occasions, so they’re a really nostalgic food for me. The crêpe recipe below is one which my mum and nan both taught me to make from young age. It’s the recipe I’ve always used for those thin and crispy crêpes. There’s so many toppings to choose from but I don’t think anything will ever top a classic lemon and sugar for me.
