I initially wanted to do ribs for this recipe, but when I couldn’t get hold of any, I went for pork belly instead and I'm so glad I did. Pork belly slices are such good value for money and incredibly easy to cook with. I think they can be quite an underused ingredient, but this recipe has reminded me just how delicious they can be.
Using cola in the sauce adds a fantastic depth, creating a sweet and sticky glaze. I love how the cola enhances the overall flavour, and it gives the sauce a great colour too.
I topped my sticky BBQ pork belly slices with fresh parsley because I had some in the fridge, but coriander or chives would also be lovely. These herbs add a fresh touch, perfectly balancing the rich, sticky sauce.
