Hey everyone, I hope you all had a lovely weekend.

I’m really excited about this week’s recipe. It’s a true classic and a dish I’m very fond of.

This slow-cooked beef short rib recipe has been my go-to comfort dish every autumn and winter since I first learned to cook it, and I’ve loved it ever since. There’s something really special about this cut of meat, the way it transforms into tender, delicious thing after a few hours of slow cooking. I personally think this recipe. is wonderfully low-maintenance (some might disagree), perfect for cold days when you want to fill the house with rich aromas. There’s no need to fuss over fancy/accurate chopping or complicated steps. Most of the work is done in one pot too.

And when it comes to serving, nothing pairs better than a generous amount of buttery mashed potatoes. I love a rich, velvety mash and if I could afford it, I’d do a full 50/50 butter-to-potato ratio. The creamy texture pairs perfectly with the rich meaty ribs and sauce. Another great pairing is a smooth, silky polenta, if that’s your thing!

These short ribs are also perfect for hosting a group of friends, especially when you want a special main course without the stress. You can prepare everything the day before — get the ribs cooked to perfection, strain and thicken the sauce, then just heat it all up when you're ready to serve. There’s no last-minute worry about nailing a medium-rare steak or making sure pasta is al dente. Short ribs are incredibly forgiving; they only get better with time, soaking up even more flavour.
