Salted Caramel Burnt Basque Cheesecake
This has to be my all time favourite dessert. It's such a great make ahead number and I love serving this one up for friends.
I made 3 cheesecakes this week. Vanilla, coffee then salted caramel. This was my favourite of the 3. If you’re looking for a dessert that takes minimal effort but is insanely delicious then this is the one.
Serves 8
Ingredients
530g cream cheese
330g double cream
40g caster sugar
120g caster sugar
4 eggs
15g plain flour
1 good pinch of sea salt
Method
First line a 7 inch cake tin with grease proof baking paper, making sure the paper is above the edge of the cake (the tin will be really full). Preheat the oven to 220 degrees.
Make the caramel by adding the 120g sugar to a pan and heating it slowly until you have a dark caramel. Add in the double cream and stir until you have a smooth caramel. Add the salt then allow to completely cool.
In a bowl cream together the cream cheese and 40g of sugar. Next sieve in the flour and mix until it’s combined with no lumps.
Next beat in the eggs one at a time.
Once the caramel sauce is cool add it to the cream cheese in 3 additions.
Add the mix to the lined tin and place in the oven for 30 minutes.
Remove from the oven and allow to fully cool before serving to allow the middle to settle.
