Roasted Tomato and Pepper Ditaloni with Fennel Pangrattato
The perfect dish for the in between weather we're having in the UK at the moment. Not quite warm, but not quite cold. This dish is everything I've been craving, it's hearty and light at the same time.
When I cooked this dish it was definitely inspired by the warmth of a minestrone, a real comfort food classic. I used ditaloni which is like a really tiny rigatoni, however, any small pasta shape would be great for this recipe.
