Pig cheek is a cut often overlooked. It transforms into a true delight when braised with just a few other ingredients. If you haven’t cooked with it before, I’d suggest buying some from your local butchers and giving this recipe a try. If you don’t fancy the ravioli making, this ragu is also delicious served up with pappardelle.
