I love a creamy, mushroom pasta as much as the next person but in this recipe the mushrooms bring a meaty, earthy flavour. I blitzed the mushrooms in a food processor until fine and cooked on a high heat until caramelised. Once golden, sage, onion, garlic and white wine are added to the pan followed by chicken stock to simmer.
