Hey everyone! I’m really excited about this week’s recipe as it’s something I’ve wanted to bake at home since November last year. I’ve finally had the chance to adapt my original basque cheesecake recipe to add the flavour of matcha.
Last year my housemate got a whole Matcha Shortcake from KOVA Patisserie and my personal fixation on matcha in desserts started. We spent days on end making our way through the slices of fluffy matcha chiffon cake, matcha cream and panna cotta. I was super sad when we finally finished the last piece. If you’re in London, I can’t tell you enough how great KOVA Patisserie is. It’s definitely worth a trip to try their insanely good bakes and they have a few different locations.
Since then, I’ve really wanted to create a matcha flavoured version of my favourite dessert, the burnt basque cheesecake. Jenki Matcha kindly sent me some of theirs to try, and this was the perfect excuse to bake it.
