Hey everyone, I hope you’re having a lovely weekend.

There’s something about slow-simmered, tomato-based dishes that feels instantly comforting, and this creamy tomato lentils with sausages recipe is no exception. It’s packed with flavour, comes together in under 40 minutes, and is the perfect balance of hearty and wholesome. A spoonful of Greek yoghurt stirred in at the end adds just the right amount of creaminess.

Lately, I’ve been trying to get more protein into my diet in different forms, beyond just the usual go-to sources. Lentils are a great way to do this, they’re not only packed with protein but also full of fibre. I’ve also been swapping out double cream for Greek yoghurt in some recipes to add extra protein while keeping that creamy texture. In this dish, the yoghurt blends really well with the tomato base, making it feel rich without being too heavy.

This is one of those no-fuss recipes that works just as well for a busy weeknight as it does for a slow, cosy weekend dinner. Serve it up with a grating of Parmesan, a handful of fresh basil, and some crusty bread to mop up the sauce.
