Hey everyone! I hope you’re all as thrilled as I am that the sun has finally made an appearance. Now let’s try not scare it off again.

This recipe makes a big batch of confit tomatoes that you can use not only in this salad dressing, but in lots of dishes throughout the week. Cook them down a little further to create a rich, caramelised tomato sauce for an easy weeknight pasta, or toss through sautéed Mediterranean veg for a fresh and flavoursome side dish.
